Cherry Caprese Salad

What says Christmas more than a green and red, light and summery salad?
Probably lots of things... but still, it screams Christmas and I love it!!
Serves 4 as a side salad
Serves 2 as a main
Ingredients:
500g cherry tomatoes, sliced
60g rocket
1 x 220g tub of cherry bocconcini
1 bunch basil, roughly chopped
2 tbsp balsamic vinegar
1 tbsp extra virgin olive oil
Method:
Tear apart the bocconcini and place into a large bowl with the rocket, cherry tomatoes, and basil and toss to combine. Drizzle over the balsamic vinegar and oil and serve
