Choc Banana Muffins



Scrumptious muffins that combine the goodness of banana and the joy of chocolate!


These muffins are so moist and full of flavour! They have the perfect amount of sweetness from the bananas and chocolate chips, with only 1/4 cup of maple syrup to really satisfy that post-dinner sweet tooth. They're the perfect healthy sweet treat that will leave you perfectly satisfied!


If you're not a fan of chocolate you could also swap the chocolate chips for blueberries

Low FODMAP


Ingredients:

  • 3 ripe bananas mashed

  • 1/4 cup maple syrup ( or honey, rice malt syrup - any liquid sweetener)

  • 1/4 cup extra virgin olive oil

  • 1/4 cup low fat greek yoghurt (Chobani)

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 3/4 cup self-raising wholemeal flour

  • 1/3 cup dark chocolate chip

(For low fodmap use maple syrup, lactose-free yoghurt and buckwheat flour)


Method:

  1. Preheat an oven to 180c.

  2. In a small mixing bowl mash the bananas and then add the honey, oil. yoghurt, eggs and vanilla. Mix well

  3. In a large mixing bowl sift the flour, make a well in the centre and pour in the wet ingredients. Mix until just combined and stir in the chocolate chips.

  4. Spoon spoonfuls of mixture into a muffin tray lined with patty pans or greased with oil/butter. Bake for 20-25 minutes
