Dark Chocolate Sweet Potato Brownies



This is one of the first-ever recipes I posted on my Instagram!! Oh how my photography game has grown... and I'm sure it will keep growing over the next 2 years! (I hope)


Regardless of that, it is still one of my favourites recipes that I ALWAYS come back to.

I was in need of a chocolatey, gluten and dairy-free recipe for a friend that was coming over; I searched high and low for something different, something healthy, but still fun!

I ended up coming back to this recipe because it is just SO good, and really easy to make too.



Serves 15

Gluten-Free, Dairy-Free, Vegan, low fodmap

Ingredients:

530g Sweet potato

1/2 cup rice malt syrup

1/2 cup Extra virgin olive oil

1 cup Cacao powder

2 tsp vanilla extract

1 tbsp baking powder

100g wholemeal flour (or GF flour)

Method:

1. Preheat an oven to 180c. Grate the sweet potato and squeeze out all excess water (the weight of mine after this was 300g)

2. Mix together all ingredients in a bowl

3. Then transfer to a lined 15cm x 15cm square baking tray.

4. Bake at 180c until a skewer comes out clean (approx 15 mins)
