Garlic Roasted Prawns with Mango Salsa

The perfect dish for entertaining! Super quick and easy to make, serves many and is, of course, absolutely delicious! It's like summer on a plate

Serves 6
Ingredients:
1 kg tiger prawns
6 cloves of garlic, crushed
1/3 cup garlic-infused olive oil
2 limes, sliced
1/2 cup fresh parsley, chopped
Mango Salsa:
2 mangoes, diced
1 red onion, diced
1 red capsicum, diced
1 bunch coriander, roughly chopped
1 lime, juiced
pinch of salt
Method:
Preheat an oven to 200c.
In a large bowl, combine the garlic, oil, limes and parsley. Add the prawns and mix well.
Place the prawns on a lined baking tray and bake for 15 minutes
In another large bowl, combine the mangoes, onion, capsicum, coriander, lime juice and salt. Gently mix together and serve with the prawns.
