Garlic Roasted Prawns with Mango Salsa



The perfect dish for entertaining! Super quick and easy to make, serves many and is, of course, absolutely delicious! It's like summer on a plate





Serves 6


Ingredients:

1 kg tiger prawns

6 cloves of garlic, crushed

1/3 cup garlic-infused olive oil

2 limes, sliced

1/2 cup fresh parsley, chopped


Mango Salsa:

2 mangoes, diced

1 red onion, diced

1 red capsicum, diced

1 bunch coriander, roughly chopped

1 lime, juiced

pinch of salt


Method:

  1. Preheat an oven to 200c.

  2. In a large bowl, combine the garlic, oil, limes and parsley. Add the prawns and mix well.

  3. Place the prawns on a lined baking tray and bake for 15 minutes

  4. In another large bowl, combine the mangoes, onion, capsicum, coriander, lime juice and salt. Gently mix together and serve with the prawns.
