Healthy Chocolate Brownies (with hidden black beans)



A weird fact about me: I LOVE baking, but rarely eat what I bake. Not because I don't like the taste, or it's not good for me. But because I just really like the cooking part!!!

It's therapeutic, fun and I like giving them to people.

Usually, I spend the majority of the weekend baking/cooking and end up giving it all away to friends and co-workers. Or daniel eats them. (haha)


My point to this story is that when I make these black bean brownies, my favourite thing to do is not tell the recipient of my weekend baking adventures that they're made from beans, and then see if they can tell that they're 'healthy' brownies. So far, no one has guessed and EVERYONE adores them.





Serves 12-16 GF, DF


Ingredients:

1 tin black beans, drained and rinsed

1/2 cup oats

1/4 spelt flour (or GF flour)

1/4 cup cacao powder

1/4 cup extra virgin olive oil

1/3 cup honey (or 1/2 cup if you prefer a sweeter taste)

2 eggs

1 tsp baking powder

1 tsp vanilla extract

1/3 cup walnuts


Method:

1. Preheat oven to 180c

2. Blend all ingredients, except walnuts, in a food processor.

3. Chop walnuts and stir through the mixture

4. Pour into a lined square brownie tin and bake for 15 minutes.
