Healthy Rocky Road



Healthy rocky road - A delicious chocolate slice filled with nourishing nuts, dried cranberries and puffed rice, you could also use popcorn too! A healthy twist to the favourite rocky road chocolate bars. These are also vegan, gluten-free and dairy free


Serves 16, Gluten free, dairy free, vegan


Ingredients:

1/3 cup extra virgin olive oil

1/3 cup rice malt syrup

1 tsp vanilla extract

3/4 cups cacao powder

1 cup puffed rice

1 cup shredded coconut

1 cup chopped almonds

1/4 cup cranberries or goji berries

1/4 cup cacao nibs

1 scoop (30g) chocolate protein powder


Method:

  1. Combine the oil, cacao powder and rice malt syrup in a small saucepan over medium heat. Heat until they're both combined. Take the pan off the heat and, mix in the vanilla extract.

  2. In a large bowl, combine the puffed rice, coconut, nuts, cranberries, cacao nibs and protein powder.

  3. Pour the rice malt syrup mixture over the puffed rice and mix well.

  4. Transfer the mixture into a lined baking tray and press down firmly. Place in the fridge or freezer to set.
