High Protein Choc Chip Muffins



I am OBSESSED with these muffins! It's the same recipe as my Chocolate Protein Brownie Bites / Chocolate Protein Muffins but a vanilla and choc chip version. I now can't pick which is my favourite, they're so light and fluffy and bouncy and delicious!


They are the perfect sweet snack and are pretty high protein for a small low-calorie muffin! Muffins don't usually contain protein, nor do they have to - but protein is filling and satisfying so I like adding it to this particular recipe!


Serves 16


Ingredients:

  • 1 cup flour

  • 1/2 cup vanilla whey protein powder

  • 1 tsp bicarb soda

  • 1/4 tsp salt

  • 1/2 cup milk

  • 1/2 cup maple syrup (or any liquid sweetener)

  • 1/3 cup vanilla greek yoghurt

  • 1 egg

  • 1 tsp vanilla extract

  • 1/4 cup dark chocolate chips

Method:

  1. Preheat an oven to 180c.

  2. In a large bowl sift the flour, protein powder, bicarb soda, and salt.

  3. Make a well in the centre of the flour mix and add the milk, maple syrup, yoghurt, egg and vanilla. Mix until combined (it will be quite runny, but don't stress)

  4. Grease or line a muffin tray with patty pans and spoon spoonfuls of mixture into 16 patty pans (be careful not to overfill them as they will overflow).

  5. Bake for 16 minutes and then allow to cool in the tin for 10 minutes before transferring to a cooling tray
