Jackfruit Red Cury

I am loving jackfruit at the moment! It is a vegetarian and vegan meat alternative which is SUPER easy to use and also tastes delicious.

I have used the red curry flavoured jackfruit from Plant Life Food co which is available in the health food aisle in Woolworths (Australia). You could also use a regular jackfruit (no flavour) and add a little bit more curry paste instead.

I had a bit of fun when serving this meal to my (usually meat-eater) boyfriend, I didn't tell him it was vegan or vegetarian, just pretended it was a normal meat-based curry and he had NO idea. So if you have any picky partners or kids, try this with them and see if they know the difference

Serves 4, GF DF


300g red curry jackfruit (I use plant life food co from Woolworths)

1/2 cup red curry paste

600ml light carnation cream or coconut milk

1/2 cauliflower, cut into florets (roughly 2 cups)

1 large broccoli, cut into florets (roughly 3 cups)

250g green beans, cut in halves

1 cup rice (raw) or 3 cups cooked


  1. Add the rice and 1 1/2 cups of water to a medium-sized pan and simmer ~10 minutes or until the water has evaporated.

  2. Add the red curry paste, carnation cream and jackfruit to a medium saucepan and heat for 8-10 minutes.

  3. Steam the cauliflower, broccoli and green beans.

  4. Divide the rice, curry and vegetables between 4 bowls and serve
