Teriyaki Salmon Tray Bake

I don't know about you but as much as I LOVE cooking I really despise the washing up afterwards... Which is why one tray dinners are my favourite! And this one is no exception, delicious roasted veggies with salmon fillets and a healthy teriyaki sauce. YUM!

Serves 2, GF DF
Ingredients:
2 salmon fillets
1 bunch broccolini
200g cherry tomatoes
2 cups cauliflower
40 mL tamari
1 tbsp water
1/2 tbsp honey
1/2 tbsp ginger, minced
1/2 tbsp garlic, minced
Method:
Preheat oven to 200 c. In a bowl, mix together the tamari, water, honey, ginger and garlic. Add the salmon to the marinade and allow to marinate for a minimum of 30 minutes.
Chop the cauliflower into florets and place on a lined baking tray with the broccolini, tomatoes and salmon. Drizzle the marinade over the salmon.
Bake for 25-30 minutes and divide into 2 serves
